Cheesy Chicken & Rice

This Cheesy Chicken & Rice recipe is a simple weeknight meal.

Ingredients
  

  • 1 6.9-ounce box Rice a Roni
  • 1 can Cream of Chicken Soup
  • 1 cup Sour Cream
  • 1-2 cups Cooked Chicken
  • 1 cup Cheddar Cheese Shredded
  • ½ cup Carrots Chopped
  • ½ cup Red Bell Pepper Chopped
  • 1 tablespoon Butter unsalted
  • Salt and Pepper to taste

Instructions
 

  • Preheat oven to 350° Fahrenheit.
  • Cook rice according to package directions.
  • While the rice is cooking, in a medium saucepan, add the butter and sauté the carrots and red pepper for about 5-8 minutes.
  • In a medium-sized bowl, mix together the sour cream, cream of chicken soup, chicken, and sautéed veggies. Add this mixture to the cooked rice and mix together, place in a casserole dish.
  • Top with the cheddar cheese. Place in oven, uncovered for 20-22 minutes. Take out and serve! Enjoy!

Notes

Optional: Any veggies can be added or substituted, ie: green pepper, celery, onion, peas, broccoli, or zucchini.
